Umbrian Truffle

In Umbria, truffle is not just a product, but an integral part of the landscape and local life. In the forests of the Pietralunga area and Upper Umbria, as well as in Norcia with the prized black truffle, seasonal foraging takes place, especially for white truffle, following long-standing traditional practices. Fairs, tastings, and local restaurants allow visitors to discover this intensely aromatic ingredient and its deep connection between nature and cuisine.

This experience allows visitors to observe the milling process and understand the sensory characteristics of new oil, set within a distinctive and recognizable landscape of olive groves covering the rolling hillsides.

From Lake to Table

The Trasimeno area expresses its identity through ancient crops and flavours tied to rural life. In summer, lake fish—European perch, tench, and the typical “Carpa Regina” (queen carp)—arrives fresh on tables. In autumn, the harvest of legumes and cereals, such as the Fagiolina del Trasimeno, spelt, and lentils, shifts attention back to the land. Between markets, farms, and restaurants, taste follows the rhythm of the seasons and becomes a way to read the landscape.

  • San Feliciano – fishing village
  • Fagiolina del Trasimeno – native legume, Slow Food Presidium
  • Local markets – direct sale of cereals and legumes
